Whipped Cream From Scratch

1 c. whipping cream
3 1/2 T. powdered sugar*
1 t. vanilla**

Put all ingredients into a quart sized glass bowl.
Using a hand mixer, beat until soft peaks form
 (When you lift the mixer out of the cream mixture, the peak will remain, not fall). 
Chill or enjoy right away.

*You can use 2 T. granulated sugar in place of 3 1/2 T. powdered sugar
 **The type of vanilla greatly affects the flavor of your whipped cream. 
I like to use imitation vanilla 

Try it on pancakes, oatmeal, fruit, or pie!
